Flavour – The cup presents a mild to moderate fruit expression with notes of dried fruits, plum, followed by juicy tropical fruit characteristics reminiscent of pineapple. The mid-palate transitions into orange peel, dried fruits and soft dark fruit nuances, creating a layered and well-defined flavour progression without overshadowing the fruit expression.
Acidity- Bright, juicy and citrus-like with a mandarin and overripe pineapple character. The acidity is vibrant yet balanced, providing excellent structure and freshness without becoming sharp or overwhelming.
Body – Medium with a smooth, rounded and juicy mouthfeel. The body provides sufficient weight to support the bright acidity while maintaining transparency and clarity throughout the cup.
Aftertaste – Medium long, clean, carrying lingering notes of candied orange peel, citrus oils and dried fruits.
A slight drying sensation appears in the finish, reflecting the fermentation while allowing the fruit sweetness to be present.

Water: 91°C
Grind size: 650 microns
For 1st pour and bloom
* Slow pour 50 ml in a circular manner
* Let the coffee bloom for 30-40 sec
For the second pour
* Continuing circularly, pour an additional 140 ml until 190ml.
* Swirl 2-3 times
For the third pour
* At 1 min 30 sec, pour additional 35ml until 225ml.
* Swirl 2 times and try to finish by 2 min 15 sec
